We are used to getting pancetta in nice round slices because it's rolled after curing. Not so with pancetta pepato, which is presented in a flat slab, like bacon. The curing process is the same as with regular Italian pancetta, and in the case of Salumeria Biellese, they make this beauty with 100% Berkshire Pork bellies seasoned with peppercorns and rosemary, cured and then air dried to mature the flavors. Easy to cut into lardons, cook this as you would regular bacon, to crispy and crackling perfection.
