Also known as the Perigord truffle, the Black Winter truffle has a dark heavily-veined interior and lumpy exterior reminiscent of tree bark. By far the most intensely flavorful of the truffles, a little goes a long way with this tuber. Found during the Winter months in Europe, specifically the countries of Italy, France, and Spain, the Black truffle is widely regarded to be one of the best varieties available. Once only accessible for a few weeks every year, the Perigord truffle’s season has been extended to year-round availability thanks to the relatively recent practice of truffle cultivation in Australia. Being in the Southern Hemisphere their seasons are backward to those of us in the North and offer a convenient option for those in need of truffles regularly.
Sold whole our Black Winter truffles are each approximately 1.5-ounces in weight. On arrival, transfer your truffles to the refrigerator immediately to await use. For maximum flavor, be sure to use your truffles within the first 2-3 days after they’ve been received.
