Genuine Long Island Duckling

If you’re looking for premium duck unlike any other, you’ve come to the right place. Long Island, NY is highly reputed for producing the best duck in the world. Its humid climate, sandy soil, and copious amounts of natural running water make it ideal for duck farming. This particular duckling was raised by Crescent, one of Long Island’s last remaining duck farms, where each duck is a direct descendent of Peking ducks that were brought from China in the late 19th century.

Crescent’s diligent carers feed the ducks a nutritious diet of corn, soybean and wheat, rich in vitamins and minerals but entirely devoid of steroids or growth hormones. Flocks are attended to 3 times per day, 7 days a week, ensuring a comfortable environment in which to grow and thrive. By day the ducks roam in large, open pens, free to frolic and forage as they please, while at night they rest in well-ventilated and well-lit barns. By utilizing the utmost quality control, Crescent ensures Grade A White Peking ducklings that are guaranteed fresh, wholesome and succulent.

This duckling can be used in a number of meals. It’s especially apt as centerpiece to a roast dinner (roasting potatoes in the duck’s fat will make them especially scrumptious!). But the duckling’s succulent quality also marries well with sweeter flavors, such as beetroot and sweet potato, or a glistening marinade of honey.

Very, very good quality duck. Very moist but using the recipes used allowed the fat to drip out without drying the ducks out. They were mild and very delicious!
