Elk Medallions

The trick to making a simple dish extraordinary is to start with extraordinary ingredients, that’s never been easier than with our succulent elk medallions from Broadleaf! Sourced from the lush pastureland of New Zealand’s picturesque countryside, our elk are allowed to roam freely, grazing at will on the young and tender grasses. This natural lifestyle and diet imbue our elk with a singularly delicious taste unequaled in other meats. Harvested at a young age ( generally 12-24 months), our elk never has the opportunity to become tough or develop any ‘gamey’ flavors. Mild and savory with a distinctly sweet finish, our premium elk medallions from Broadleaf are the perfect way to introduce a little wild game meat into your regular dinner rotation.

At Gourmet Food Store, we’re proud to be partnering with some of the foremost purveyors of luxury food in the world, and Broadleaf is no exception. With quality at the center of everything they do, their core tenants and values as a company align perfectly with our own. Humanely raised, the elk from Broadleaf is second to none! Grown free-range on the clean and open pastures of small family-owned farms in New Zealand, our elk is buttery soft and delicious. Grass-fed, as nature intended, our elk medallions have a subtle taste that lends itself to a wide range of flavor profiles, allowing chefs and enthusiasts creative freedom in the kitchen.

Preparing elk is very easy, but like all game meats, it is much leaner than the more familiar options like beef. As such, there are a few cooking tips to render it the best it can be. The first and foremost of these is: to never overcook your elk. Taking your medallions, or any cut of elk, past medium-rare will result in a dry and significantly less than perfect finished dish. Around 130-140F is the ideal temperature, to render a juicy and succulent outcome. To maximize juiciness, opt for tongs or a spatula when cooking and turning elk. The tiny punctures left by forks will cause you to lose some of the flavorful juices within. Armed with these helpful tricks, you’re well on your way to preparing truly sensational elk based meals!
