Wild Boar Medallions
From native Texas feral pigs, fed a natural diet of wild nuts, fruits, pecans, roots, and tubers, our Wild Boar Medallions have a sweet and nutty flavor, and are adaptable to just about any cooking method. Wild boar meat usually requires slow cooking methods in order to tenderize it, but our medallions are already tender enough that they can be grilled or pan-cooked, as well as oven roasted. The flavor is also bold and formidable, so it can be paired with rich sauces, glazes and preserves to create sumptuous (yet unashamedly wild!) dishes.
Available in 4-ounce, 6-ounce or 8-ounce pieces so you can choose the size that suits you best.
