Fresh Mozzarella Information
Fresh mozzarella is classic Italian cheese, hailing from the south of Italy. It’s known as curd cheese, made using the pasta filata process. The milk is boiled separated into curds and whey, which are then drained and stretched, and shaped by hand into that characteristic ball shape. Fresh mozzarella is elastic, silky, mild and almost sweet, and perfectly sliceable.
If you’ve heard of Mozzarella di Buffala, then you know that buffalos are involved, but probably not in the way you think. The buffalo milk for mozzarella is from the Water Buffalo, not related to the North American bison – which we sometimes refer to as buffalo in the United States. This is a different animal, introduced in Italy during Roman times, and hard to find in America, which makes most of the fresh mozzarella in America made from cow’s milk. Buffalo mozzarella, of mozzarella di buffalo, if often much more expensive and rare than the fior de late or cow’s milk version.
Fresh Mozzarella Salad
There is not end of uses for fresh mozzarella, and we love all of them! The most popular is by far the iconic caprese salad – fresh mozzarella and tomato salad, drizzle with fine olive oil and aceto balsamico, with a sprinkle of salt. A great starter to a meal, especially during the summer, tomato basil mozzarella salad is a must-have appetizer.
Other ways to enjoy fresh mozzarella include of course, pizza, melted on panini or mozzarella grilled cheese, or on a simple bruschetta with mozzarella cheese and perhaps a slice of prosciutto di parma.
A more Americanized version is the ever-popular mozzarella sticks recipe, a battered and fried version that is amazing served with tomato sauce. If you’re asking yourself how to make mozzarella sticks, the answer is: very easily! Cut, batter, and fry!
