If you’ve heard of Mozzarella di Buffala, then you know that buffalos are somewhat involved, but probably not in the way you think. The buffalo milk come from the Water Buffalo, not related to the North American bison – which we sometimes refer to as buffalo in the United States. This is a different animal, introduced in Italy during Roman times, and hard to find in America, which makes most of the fresh mozzarella in America made from cow’s milk.
