About Manchego Cheese

What is Manchego Cheese?

A true artisan cheese, Manchego is made from local Spanish sheep’s milk. With the creameries strategically placed near the pastures and meadows where the sheep are raised; the transportation involved is almost non-existent. After the usual mix of heat, milk, and rennet, the curd and whey are separated, and the cheese pressed into the traditional grass woven molds, providing the characteristic pattern you see on the exterior, and imbuing their own slightly herbaceous flavors. After a dip in salty brine, the cheeses are aged and regularly brushed in premium Spanish olive oil to lock in moisture and flavor. A traditional method of production that has been passed down for centuries, Manchego remains a tried and true favorite of people all over the world!

Manchego Cheese Taste

For those who haven’t had the pleasure of experiencing this singularly tasty food, we shall attempt to put into words the true Manchego cheese taste. Made from sheep’s milk, Manchego is decidedly tangy, its piquant notes highlighted by bright, fruity moments and rounded out with layers of nutty flavor. As with most cheeses, Manchego sharpens with age, not only in terms of taste but also texture, going from open and springy to granular and intense in the span of a year. For those who prefer milder flavors, opt for the tender and subtle three-month option. For the cheese lover, a full year's maturation gives the most brilliant taste. And for those not yet decided, a convenient middle-of-the-road, six-month wheel is ideal.
