With the creameries strategically placed near the pastures and meadows where the sheep are raised; the transportation involved is almost non-existent. After the usual mix of heat, milk, and rennet, the curd and whey are separated, and the cheese pressed into the traditional grass woven molds, providing the characteristic pattern you see on the exterior, and imbuing their own slightly herbaceous flavors. After a dip in salty brine, the cheeses are aged and regularly brushed in premium Spanish olive oil to lock in moisture and flavor. A traditional method of production that has been passed down for centuries, Manchego remains a tried and true favorite of people all over the world!
