About Our Mimolette Cheese

How It’s Made

Mimolette cheese was first created as the French answer to the popular Dutch Gouda. During the 17th century, war raged between Holland and France, and the import of anything Dutch was banned. Born into battle, Mimolette has continued to be at the center of one embroilment after the next all the way up to recent years. Recently, America’s food and drug administration waged war on the cheese itself, banning its import into the States because of its method of production and the cheese mites intrinsic to its aging process.

These tiny bugs live on the rind of aged cheeses munching the microscopic molds that grow there. A part of the natural cycle of aging cheese, you’ll find them in all varieties. A slight nuisance to the cheesemaker, they are generally brushed off before packaging for sale, but with Mimolette, the mites are encouraged. While the squeamish may be averse to the idea of bugs on their cheese, these little guys serve a very important purpose. After months of eating away at the rind, they help to aerate the cheese so the microbes can get in and do their work, affecting the flavor and texture of the cheese. Without them, there is no Mimolette, and without Mimolette, there are many a French cheesemaker and an American cheese lover whose life would be a little less delicious.
