About Fontina Cheese
What is Fontina Cheese?
At the bottom of the Alps in the Italian Aosta Valley graze the red-faced Valdostana cows that provide the milk for Fontina cheese. Delivered directly from the pasture to the creamery, Fontina represents artisan cheesemaking at its finest. The usual combination of calf rennet and heat separate curd from whey. The cheese pressed into its mold is then brined for a couple of months before it starts the special aging process that makes Fontina cheese possible. Working in symbiosis with the mountains of Valle d’Aosta, the cheese is aged in the humid grottos of the mountainside. Turned, brushed, and salted every other day for another three months, the Fontina cheese is finally complete. Made from unpasteurized milk the finished cheese is firm and sliceable with an open interior. Its taste is sweet and aromatic and boasts an incredibly rich and creamy full-bodied roundness.
While there are many cheeses that call themselves Fontina, Fontal, Fontinella, or some such derivative to make sure you’re getting the authentic DOP version looks for a reddish-brown rind. Somewhere on it, you should find the DOP seal. Earthy, nutty, and utterly irresistible, it’s worth the extra investigation.
