A beautiful combination of earthy duck meat and creamy duck livers blended with musky pork meat, whipped with oranges and orange liqueur, and seasoned to perfection.
With its chunky texture and rich flavor with a citrusy twist, this pate is perfect to spread over a baguette or brioche bread for a hearty appetizer or canapé. The fattiness of the foie gras is wonderfully contrasted with the sweetness and brightness of the orange cognac. Pair it with a citrus salad for a starter course, with a few slices of fresh oranges.
This traditional country pate is perfect for a gourmet gift basket, and it’s a great choice for a picnic. Keep it chilled until use, but take out of the fridge a few minutes before serving, so it’s not ice cold. Serves about 2 to 4 people.
