American Black Caviar
Long known in Cajun cooking, Bowfin caviar is harvested from a fish that roams the backwaters of the southern US. This inexpensive roe is sought for its unique flavor, spicy and almost tangy. With firm and shiny eggs that can vary from dark brown to black, it has an earthy and thick flavor, and is usually used on cooked dishes.
