This classic Umbrian Stringozzi is a durum wheat long pasta, cut by knife into a rectangular shape. Hearty, sturdy and almost impossible to overcook, Stringozzi clings beautifully to sauces and is typically served with ragus, tomato sauces and the pride ingredient of Umbria, black truffles.
