Octopus Salad Salpicon is a zesty mélange of cooked squid with pickled vegetables and flavorful dressing. Made following a traditional Spanish recipe, the star ingredient here is Calimar Grande, or Humboldt squid (Dosidicus gigas), which has been precut and cooked for a tasty source of protein. Paired with picked vegetables such as onions, olives and red peppers, spiced with cumin, oregano and rosemary, and dressed in olive, vegetable and sunflower oils, this salad has a uniquely Mediterranean character. This makes it a great addition to a spring or summer buffet or platter, or a light and convenient snack or lunch. With its high protein and low calorie-content, this salad is healthy as well as delightful.
