Rougie Foie Gras - A Legacy Since 1875

One of the world's largest and most reputable producers of foie gras, Rougie has been making the highest quality foie gras and pates since 1875, when they opened shop in Sarlat, smack in the middle of gorgeous Perigord. About Rougie Foie Gras

Rougie uses the Moulard breed of duck for their foie gras, a mixed cross between the Peking and Muscovy ducks. This breed boasts a high percentage of fat and a robust flavor, making it ideal for foie gras production, delivering a smooth, delicious liver. Rougie’s ducks are reared free range for 3 months, after which they're hand-fed a special blend of corn for about 10 days. This corn is grown locally and is hormone and antibiotic-free. The result is happy, healthy birds that are humanely slaughtered and produce large, buttery livers.

Rougie prides itself on artisanal, humane, and sustainable farming, never using hormones or antibiotics in their process, for an all-natural foie gras. The livers are air-chilled and then super-frozen if needed. Our selection of foie gras from Rougie includes plump whole lobes in a variety of grades - from unblemished grade A to grade C lobes ideal for terrines and mousses.
