Located in upstate New York, La Belle farms use one breed of duck to create their fabulous Foie. The Crossbreed Moulard lends itself especially well to the process and produces a rich and flavorful finished product with a smooth velvety texture. Carefully overseeing every aspect of the production of their liver, La Belle takes care in everything from the kind of birds they choose to the breeding, raising, and processing. Because their standards are so high, La Belle produces a limited amount of Foie Gras every year, ensuring their products are consistently of the best quality. Each large, smooth lobe of duck liver is hand-selected to ensure they are as close to perfection as possible. Quickly flash frozen immediately after evisceration, this process locks in the fresh flavor and ensures an even and luxurious texture once thawed for use. The duck liver is packaged and shipped frozen and can last up to 12 additional months in the freezer with no adverse effect on their quality. And as always, every tempting lobe or slice or La Belle Foie is guaranteed to be delicious!
