Lecite - Soy Lecithin

What is Soy Lecithin?

Soy Lecithin is a naturally derived emulsifier and stabilizer. Derived from fatty substances found in both animal and plant tissues, it is the ingredient in egg yolks that make them so excellent at creating emulsions like mayonnaise, aioli, hollandaise, creme anglaise, and so many more of our favorite sauces and dressings. In more modern culinary practices, soy lecithin has become the secret ingredient behind the creation of light foams and “airs.” Great for holding vinaigrettes together and preventing seperation, they also add elacsticity and moisture tolerance to doughs.
