After production, the wheels are entrusted to Giorgio Cravero, a fifth-generation affineur whose family has selected and aged Parmigiano Reggiano in Bra, Italy since 1855. Cravero ages the wheels on pine shelves and turns them more frequently than many other affineurs, helping develop a softer texture, greater depth, and beautifully balanced flavor. The result is an extraordinary expression of Parmigiano Reggiano di Montagna, prized by chefs and cheese lovers for its complexity, refinement, and exceptional quality.
