Fontina is a semi-soft cow's milk cheese hailing from the Aosta Valley in Italy. Its distinct nutty taste and creamy texture make it a versatile choice for melting in dishes like fondues and enhancing the flavor of various recipes.

More About Fontina Cheese

At the bottom of the Alps in the Italian Aosta Valley graze the red-faced Valdostana cows that provide the milk for Fontina cheese. Delivered directly from the pasture to the creamery, Fontina cheese represents artisan cheesemaking at its finest.

The usual combination of calf rennet and heat separates curd from whey. Pressed into its mold, it's then brined for a couple of months before beginning the aging process that makes Fontina cheese possible.

Working in symbiosis with the mountains of Valle d’Aosta, wheels are aged in the humid grottos of the mountainside. Turned, brushed, and salted every other day for three months, the Fontina cheese is finally complete.
