About Cervena Elk Full Strip Loin

Beefier than venison, leaner than beef, and just an all-round great cut of meat, our Cervena Elk Full Strip Loin comes from the saddle, and is large enough to roast whole or slice into steaks or medallions. Not only is it deliciously tender and flavorful, it's also lower in saturated fats and richer in vitamins and life-giving Omega 3s than beef, making it a heart-smart choice come dinner time.

The Cervena Appelation seal means that this is one of the tenderest, most delicious cuts of elk, taken from 100% Cervena Wapiti X Elk less than 3 years old, raised on free-range pastures and a natural grass-fed diet. These animals are never given genetically modified feeds, growth hormones, antiobiotics or steroids, so what reaches your plate is as natural as it is delicious.

Our Elk Meat is distributed by Broadleaf, one of America's premier suppliers of gourmet meats from around the world. They work closely with farms and manufacturers to bring the finest quality meats to American tables, including Australian Wagyu Beef, New Zealand Venison and Texas Wild Boar.

This is my first experience with Elk. I'm not sure if it's elk in general or this brand in particular but my family and I were all amazed at how incredible this cut was!! at $32/# it was worth it more than the $45/# I paid at a local market for a seasons special wagyu from Japan. It was lean but VERY tender, not gamey and my bad, I added too much salt...what I normally use to season but it told me that you really don't need much seasoning for this wonderful cut. Knowing that the nutritional value of the meat is better than regular beef, I would be happy to serve this more often. The strip that we received was about a foot long and included the silver strip, which was easy to remove. I cut them all filet style and froze about 2/3 for future use and the 1/3 yielded around 5-1" pieces. I would definitely buy this again!!
