This is my first experience with Elk. I'm not sure if it's elk in general or this brand in particular but my family and I were all amazed at how incredible this cut was!! at $32/# it was worth it more than the $45/# I paid at a local market for a seasons special wagyu from Japan. It was lean but VERY tender, not gamey and my bad, I added too much salt...what I normally use to season but it told me that you really don't need much seasoning for this wonderful cut. Knowing that the nutritional value of the meat is better than regular beef, I would be happy to serve this more often. The strip that we received was about a foot long and included the silver strip, which was easy to remove. I cut them all filet style and froze about 2/3 for future use and the 1/3 yielded around 5-1" pieces. I would definitely buy this again!!
