Sevruga is the smallest-sized and most abundant of all the sturgeon caviars. Due to its abundance, its prices aren't as high as Beluga and Osetras. Don't assume that low prices mean low quality because that certainly isn't the case. Compared to Beluga and Osetra, Sevruga has the strongest flavor of all the sturgeon caviars.
