One of the smallest members of the Sturgeon family and a veritable runt when compared with the mighty Beluga and Osetra, what the Sevruga lacks in size, it more than makes up for in flavor! Widely considered to have the most intense and rich taste of all the Sturgeon caviar, Sevruga has all the velvety butteriness one expects from premium caviar with a punch of brine. What is Malossol?

Traditionally reserved for only the highest grade caviar, the term Molassol translates to “little salt” in Russian and refers to the preserving method used. Said to be the ideal amount of salt, it both extends the shelf life of the highly perishable orbs while also enhancing the flavor of the roe. This ideal salt percentage ranges from 3-5%, and its moniker is still the sign looked for by gourmands and caviar aficionados; to ensure their purchase is of the highest quality.
