Our Wagyu Strip Loin is a fantastic cut of beef for those who prize flavor, tenderness and great presentation. It's also popularly known as the Top Loin or the famed NY Strip Steak. It’s a thick and generous steak, with a robust beefy flavor thanks to a thick cap of fat at the top. It’s taken from the short loin, a little-used muscle at the top of the steer. Because this does very little work, the meat is naturally incredibly tender – only a bit less tender than the rib eye and the tenderloin.
Our Strip comes in at marble score 4, on the lower end of the Wagyu marble scale, which means you get a great amount of fantastic marbling throughout the steaks, a wonderful buttery flavor and texture characteristic of all Wagyu, but still with a good integrity to the fiber of the meat so as not to be overwhelmingly buttery. Cook to medium-rare to make the most of that fantastic Wagyu tenderness and watch out if grilling directly on the grill – the natural fat on Wagyu makes it prone to flare ups.
This Strip Loin weights in at 13 lbs. It’s available whole, so you can cut yourself, or you can select from pre-cut steaks in several thickness options. Note that because the Strip Loin is an uneven cut – thicker on one end, tapering off on the other – you’ll get some large steaks and some smaller ones. Cutting exact steaks is not possible, so while we’ll keep it as close as possible, some steaks will be thinner, and some thicker. And waste not, want not! Any trimmings will be included.
Darling Downs Wagyu is a brand of the Australian Agricultural Company, one of the largest Wagyu beef producers in the world. Their all-natural Wagyu selection includes cut scored 3 and up on the Wagyu Beef scale. From same breeds used to produce Japanese Kobe, this Wagyu cattle is raised first on mother’s milk, then free grazing on the open pastures of Australia, finally finished with a minimum of 300 days on grain to ensure that succulent tenderness.

- Arrives chilled and vacuum sealed. Use or freeze within 7 days of receiving this product. Once opened, use or freeze within 1 day. Marked chilled, this product will arrive in a vacuum-sealed bag.
