Flavor-wise, Lonzino is very similar to Bresaola, with a deep rose color webbed with veins of delicious fat. The cure is a mix of red wine, spices, sugar and seasonings, for a rich, and tasty flavor. Our Lonzino takes delicious one step further by uses succulent Berkshire pork, a heritage breed prized for its natural marbling, which renders the mean buttery and sumptuously tender.
Slice it paper thin and serve in a charcuterie or antipasto platter or serve it simply with some hard cheeses and some juicy olives. Lonzino is a great deli meat for a sandwich, with a simple yet rich flavor that’s a great match to a sweet honey mustard and some rustic bread.
