Mille Foglie – literally, “thousand leaves”, is a rare short pasta shape. Cut into a circle with crimped edge, it is pinched at the center, making an elongated leaf-like shape, like a thin version of farfalle. This also creates a hollow, which is great for capturing thick sauces like rich tomato or hearty carbonara.
