Smoked Bison Sausages with Red Wine

In these delicious sausages, we love the three-way combo of lean, robust bison meat, sweet notes of red wine, and a sweeping smoky woodsiness to finish. Since bison meat is low in fat, they're also leaner than most pork or beef sausages. A powerhouse of rustic flavor in every bite, these links can be grilled, pan-seared or added to cassoulets, stews and pastas, adding a more sophisticated touch than your regular grocery store sausages.
