Q:I bought this cheese at Costco and it does not seem to melt in grilled cheese sandwiches or in a soufflé. Any advice on melting this cheese?

A:To make sure that the cheese melts easily you should leave it to come to room temperature before cooking with it, experiment with the thickness/thinness of the slices and try cooking the cheese for a longer time, at a lower temperature.
