Tomme des Pyrennes is made with cows milk (although you might have tried others made with goats milk), and matured for about three months to develop a yellowish, very elastic interior and a thin rind. This mild cheese is a prime example of provincial French cheesemaking, developed in the beautiful region of Midi-Pyrénées, where gastronomy is nothing less of an art. Your best bet is to pair this cheese with wines from the Pyrenees or Savoier regions.
