An economical alternative to the world-renowned black Perigord truffles of France, Black Asian truffles boast many of those same musky characteristics and look virtually identical to their Gallic cousins. Mild in terms of flavor and aroma, Black Asian truffles are the subdued version of the classic French variety, making them perfect for incorporation into patés and other recipes calling for a lot of truffles. Where the more aromatic and intense flavors of the Perigord would be overpowering, the Black Asian truffle is just right.
Excellent for use when plating dishes, Black Asian truffles are much more elastic in nature, meaning that when they are sliced thin, instead of breaking as other truffles are apt to do, they will simply bend, maintaining their shape and the look of the dish. While most truffles are knobby and irregular in form, Asian Black truffles are in general beautifully round, making them easy to use and allowing for truly creative plating!
