A modern take of the classic French rillettes! This famed delicacy is traditionally made with pork meat cooked in their fat and then shredded, but this preparation is much fresher and lighter, made with lump crabmeat and white fish meat blended with crème fraiche, sunflower oil and seasonings, shredded for a creamy yet rich texture that’s perfect to spread on everything from toasted bread to fresh endives.
Serve these on top of a fresh toasted baguette or crackers, but they’re also delicious when stuffed into tomatoes or peppers, topping endives, or even tossed with penne pasta for a fresh take on lunch. A glass of crisp white wine is highly recommended!
