Contrary to its moniker, the beef chuck tender is not a naturally tender cut of meat. Sourced from the chuck primal, this is the shoulder area of the cow (an area that gets a lot of use), resulting in lean, tough portions. However, what the chuck lacks in tenderness, it more than makes up for in flavor, and by simply preparing this cut correctly, you’ll end up with an unparalleled beef experience.
So what’s with the misleading name? Turns out the chuck tender travels under several aliases, including but not limited to: mock tender, scotch tender, chuck eye, medallion pot roast, or petite tender. The word ‘tender’ found in many of them does not denote the texture but rather the shape, as it bears a marked resemblance to the tenderloin, the king of all cuts, and the tenderest portion of beef available.
