What is Gorgonzola Cheese

Gorgonzola is a type of blue cheese, made with cow’s milk and spores of penicillium glaucum, a blue mold that gives the cheese that characteristic blue-green veined look and marbled appearance. As with almost all cheeses, the flavor profile and texture of gorgonzola changes as it ages. A young gorgonzola is sweet and mild, while an aged gorgonzola is pungent and sharp.

Gorgonzola v. Blue Cheese

Is Gorgonzola blue cheese? Yes! All gorgonzola cheese is a blue cheese, but not all blue cheese is gorgonzola. This Italian cheese masterpiece has a DOP label, a protected origin label that’s supervised by the Gorgonzola consortium. What this means is that the origin and production process is strictly controlled and supervised, to make sure each wheel of Gorgonzola that goes out to market is of the highest quality. Gorgonzola, to be called such, must come from Lombardy or Piedmont.

Gorgonzola is the perfect cheese for a cheese board – you’ll find the younger varieties suitable for most palates, and perfect with fresh fruit, a drizzle of honey, and a full-bodied red wine. It’s also a versatile powerhouse in the kitchen, it’s creamy texture a great match for polenta, risotto, and pasta sauces.
