What is Feta Cheese?

Originally a Greek creation, Feta is a fundamental element of their cuisine and the Mediterranean diet at large. A protected designation of origin product, also known as a PDO, authentic Feta is made from either sheep's milk or a combination of sheep and goat milk. However, goat milk may only represent as much as 30% of the union. Tangy and sharp, sheep’s milk is what gives Feta its characteristic flavor, and cheeses made exclusively from it have a more intense and zippy taste.

Storage

Feta, if stored properly, can last months in your refrigerator, but if not, will quickly sour and dry out. Technically falling into the pickled class of cheese, Feta needs to be submerged in brine to maintain its flavor and moisture levels. Most fetas come suspended in liquid, but if not, you can easily make your own. A simple and effective ratio is: 1 teaspoon kosher salt per cup of water, mixing up as much or as little as needed to cover your cheese completely.
