Cervena Elk NY Strip Loin is a large loin cut taken from premium Cervena Elk. The Cervena label is used only for elks that are under 3 years old, therefore offering the tenderest, juiciest meat. With only a fifth the fat of beef, and a ton of nutritious protein, iron, vitamins and omega-3s, this is a red meat that health-conscious eaters can enjoy guilt-free.

The cut has been denuded, meaning that all the surface fat and sinewy matter has been taken off, revealing an immaculate, bold cut that's low on fat and high on tender juiciness. Just be sure to cook it carefully, since its relative leanness causes it to dry out quickly if overcooked. In fact, we recommend cooking it to no more than medium-rare.
