Hackleback: Hackleback has small, crisp black eggs that glisten and shimmer. The flavor is mild but distinct, with a distinct salty flavor and that characteristic nuttiness so beloved in true sturgeon caviar. With a buttery and creamy mouthfeel, it gently pops in the mouth. A great value and a sophisticated flavor, it has nothing to envy to its European cousins.

Paddlefish: This caviar is harvested from the American Paddlefish or Spoonbill in the Mississippi and Tennessee rivers. This roe can be slightly smaller that most other caviars, but if Hackleback is more similar to Sevruga for its flavor, then Paddlefish rivals it in looks, with its silver-grayish pearls. The flavor is more earthy than crisp, yet still buttery.

Bowfin: The eggs of Black American caviar come from the Bowfin, which is also known as Chourpique or Cajun Caviar in parts of the American South. It is an ancient species of fish, and the roe is brownish to jet black in color, very firm, and has a tangy and earthy flavor.
