What is Akaushi Beef?
Imported to the US for the first time in the early 1990’s we have only recently had the privilege of enjoying Akaushi Wagyu in America. Sourced from the Japanese Red, this distinctive breed of cattle is rare. Raised on the southern Japanese island of Kyushu, this beef is highly-prized for its rich flavor. The Akaushi originated in Kumamoto Japan. Recognized as one of the island nation’s only free-grazing cattle breeds, they are never fed any grains. Only eating local grasses and herbs infuses their beautifully marbled meat with a deep, complex flavor profile.
