Any chicken organic or traditionally raised can lose a lot of its flavor if chilled in water. It is a common practice to cool chickens after they’ve been butchered by plunging them into cold water. While this method effectively brings down their temperature, it also tempers the taste of the chicken. As the bird absorbs the water, its natural taste is diluted.
