Guanciale, Cured Pork Jowls

Guanciale is made from curing pork jowls, which unlike bacon which comes from the belly of the pig, has much more intramuscular fat - hence, more flavor and tenderness. The jowls are cured with a mix of Italian herbs and spices, giving Guanciale an earthy super rich flavor. Use this for the classic Italian recipe of Spaghetti all’Amatriciana and Pasta Carbonara.
