Guanciale, Cured Pork Jowls

Fans of bacon (pretty much everyone) will fall instantly in love with Italian Guanciale. Guanciale is made from curing pork jowls, which unlike bacon which comes from the belly of the pig, has much more intramuscular fat - hence, more flavor and tenderness. The jowls are cured with a mix of Italian herbs and spices, giving Guanciale an earthy super rich flavor. Use this for the classic Italian recipe of Spaghetti all’Amatriciana and Pasta Carbonara.
