The tayberry is a cross between red raspberry and blackberry, with a sweeter flavor and larger size than its parents. Because the fruit is so fragile, it's difficult to harvest commercially and so can usually only be found in farmer's markets and specialist shops. French fruit company La Fruitiere farms their own tayberries in the rugged landscapes of Brittany, crushing the fruits into a smooth puree that has a variety of uses in the kitchen:
