Hacienda Zorita is a pioneer of organic farming in Spain, specializing in sheep’s milk cheese made from their own herd of “Churra” sheep, indigenous to the Dehesa.
Hacienda Zorita is located in the Duero Valley, 300 hectares of protected natural dehesa or pastures, oak forests and fields, where their cattle of Churra sheep, Verata goats (today almost extinct), Mangalica pigs from Hungary and African water buffalo are raised in happy harmony.
This cured sheep’s milk cheese is made in their organic farm, using raw milk, following traditional methods, and left to cure for up to 12 months, an art in itself. The flavor is lactic, with a well balanced taste and hints of toasted nuts and hay. The yellow paste is slightly sweet. Serve this Queso Curado on a board sprinkled with nuts and almonds, slices of apples and grapes, rustic country bread and velvety red wine.
