A fancy-sounding mix of chocolate and cream, ganache is incredibly easy to make, and super versatile. It makes for luscious tart and pastry fillings, and is used in all manner of bakery treats.

Ingredients

Directions
  1. In a medium heatproof bowl, place the chopped chocolate.
  2. Bring the cream to a boil in a small pot, and remove from heat. Immediately pour it over the chocolate and let it melt, without mixing. After 2 minutes, whisk until smooth. Use ganache while warm, or follow directions to cool it down and store for later use.
  3. To store: let the ganache cool down and cover it with plastic film, poking holes to circulate air. Let fully cool down at room temperature and store in an airtight container (5 days).
