About Piave Cheese

A true hidden gem, Piave has been made for centuries within the Italian alps but never made it beyond localized sales. Named after a river, the cheese inexplicably never made it out of the region. Its excellent qualities finally recognized, it is now being exported by the wheel and enjoyed all over the world.

DOP protected, the only authentic Piave is made in the Dolomites from cow’s milk. Available in five versions (depending on the length of maturation) which can range from as little as 20 days to over 18 months. Strong and fruity with surprisingly little sharpness, you’ll love how well it pairs with other flavors. Key features:

  • Texture: hard and granular with a straw-yellow to pale yellow color. Its texture becomes crumbly as it ages, making it perfect for grating over dishes.
  • Flavor: with a sweet and nutty flavor with notes of tropical fruit, it is less sharp and salty than Parmigiano-Reggiano.
  • Aging: it’s available in several aging stages, including Fresco (20-60 days), Mezzano (61-180 days), Vecchio (more than 180 days), and Vecchio Selezione Oro (aged over 1 year). The aging process intensifies the flavor and texture.
  • Uses: very versatile, it is excellent for grating over pasta, risotto, or salads. The milder and fresher varieties can be enjoyed as table cheese, while the aged versions are perfect for adding depth to dishes.
  • Production: made from cow's milk, and it follows a rigorous production process, including the use of microbial rennet and strict aging guidelines.
