Masterfully trimmed of all exterior fat, the baseball steaks from Broadleaf require zero prep work making them a go-to choice for the wise chef or the hurried home cook. Sourced from premium Australian Wagyu beef, this portion becomes even juicier and more tender. While MS3 represents the leaner end of the marbling spectrum, it still offers far more intramuscular fat than even the most luxurious generic beef.
The term Coulotte or baseball steak may not be familiar to you and is often difficult to find in the meat department at most local supermarkets. Cut from the Sirloin, this part of the cow is home to many of our favorites: including the T-bone, Porterhouse, and Club steaks. The Coulotte comes from the more desirable top of the Sirloin. Used less than the rest of the muscle, it boasts a velvety soft texture, almost like tenderloin. This portion is called the baseball cut, thanks to its slightly rounded shape. Sliced thick, it’s not only one of the tastiest portions but also one of the most elegant!
