Boston Butt, or simply pork butt and pork shoulder, are two cuts that are often mistaken for one another. Also bearing rather misleading names, the confusion is often compounded. Though the Boston Butt might suggest it comes from the rear of the animal, in truth, it’s taken from the shoulder. Specifically from the upper half of the shoulder, while the pork shoulder confusingly makes up the bottom half of the primal. Both portions of pork are relatively fatty and tough, but when cooked low and slow via roasting, stewing, or braising, lend big flavor to dishes and render excellent results.

Berkshire pork has long been considered some of the finest pork available in the world. A heritage breed Berkshire pork was the culmination of years of masterful pig breeding in England, resulting in a pork so tender, flavorful, and well-marbled, that it has since earned its title as the “Wagyu of Pork.” More intensely flavorful than generic pork, the difference between the two varieties are visible at a glance, as Berkshire meat is much darker than ‘the other white meat.’
