For their White Fig Preserves, L’Epicurien uses perfectly ripened white figs, a variety of fig that’s lighter and sweeter than the more common black figs. Only white figs of the Dauphine variety from France are selected and it is their naturally high level of fructose that results in their unique honeyed and delicate taste after cooking, making this elegant preserve an excellent addition to any kitchen.
The Dauphine figs, with their very thin skin and barely any seeds, are slowly simmered in large copper cauldrons that allow the fruit to reach perfect tenderness while also caramelizing the fruit’s natural sugars. Similar to a fine wine, this white fig jam will continue to candy as it ages.
