This means every Prosciutto di Parma ham originates in the hills surrounding Parma, Italy, and is made using meticulous and traditional methods that have not changed for centuries (after all, why change something that works so perfectly?). The meat comes from three very particular breeds of pig (Duroc, Large White and Landrace), which are fed a natural diet of grain and whey. This lends their meat a rich flavor nuanced with nuttiness. Every leg of ham is inspected by the Parma Ham Consortium, which has been monitoring Prosciutto di Parma production since the Middle Ages.
