Vacherousse D'Argental

Vacherousse d’Argental is made in southern France, its name translates to “red cow,” a fitting name for this striking orange cheese. To achieve this natural rind: the cheese is washed in a combination of brine and annatto then aged for three weeks to mature.

When perfectly ripe, its bloomy rind will sink slightly around the edge. Reminiscent of a meadow in flavor, its rind is mild and not bitter at all. To enjoy all of its tasty characteristics to the fullest: pull this cheese out an hour before enjoying it to soften.
