One of our favorite Spanish delicacies, Casa de Alba has created a truly delectable interpretation of the classic, turrón de Jijona. Made using only the finest ingredients, they incorporate Spanish rosemary honey, with egg whites, and roasted Marcona almonds, cooking them down into a delicious nougat. Though there are two varieties of Spanish turron, the ingredients and proportions in both are almost identical, the end products, however, are very different. Turron de Alicante is a brittle mixture of firm, chewy nougat made of honey, egg whites, and nuts (generally Marcona almonds). Turrón de Jijona, on the other hand, while it is still composed of the same foundational ingredients, the almonds are first pulverized into a paste before they’re incorporated into the nougat mixture. The final difference is the addition of oil into the Jijon, which changes the ultimate matrix from firm and breakable to soft and pliable.
