Guinness® and Wagyu Beef Stew Recipe

What could be more inviting than a wholesome, steamy stew filled with chunks of mouthwatering Wagyu beef? In this recipe, peeled potatoes, caramelized onions, bacon and seasonings enhance the stew's comfort factor, but iconic Guinness® stout beer is what really brings it together. Its robust, malty flavor and simmering heartiness contrast wonderfully with the tenderness of the Wagyu beef, making this stew complex yet worthy of the most rambunctious St Paddy's Day celebration.

Guinness® and Wagyu Beef Stew Recipe

Ingredients
  • 2.5 lbs wagyu beef stew meat
  • 4 tbspn clarified butter
  • 1 large chopped Valencia white onion (or sweet onion)
  • 3 raw strips of bacon, chopped into 1/4 inch strips
  • 2 tbsp tomato paste
  • 2 tbsp all purpose flour
  • 1 11.2 oz Guinness Extra Stout beer
  • 3 cups of beef stock
  • 6 small yellow potatoes, washed, peeled and uncut
  • 1 tsp dried marjoram
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Your favorite hearty bread

Directions
  1. In a hot pot, melt the clarified butter on medium-high heat and sautee the Wagyu beef chunks in the melted butter. Once browned on all sides, remove the meat from the pot, but leave the drippings intact.
  2. Add the onions, bacon, tomato paste and flour to the drippings. Mix regularly so the onions don't burn. When the onions begin to crystallize (about 3-5 minutes), reduce the heat to a simmer and add the Guinness® Extra Stout beer and beef stock carefully to avoid flare-ups. Resume stirring until well combined.
  3. Return the cooked beef chunks to the pot along with the peeled potatoes. Season with the marjoram, oregano, salt and pepper. Cover and simmer for 2-3 hours until the beef falls apart easily with a fork.
  4. Serve with your favorite hearty bread.
