With a marble score of MS3, this hunk of meat is webbed with fine streaks of intramuscular fat that melt during cooking and infuses it with unbeatable creaminess. The strip loin - also known as the NY Strip Steak, Top Loin or Kansas City Strip - is a hugely popular cut since it has a bold amount of flavor and is also very tender. In fact, since this is Wagyu beef, it's a lot more tender than your average tenderloin or filet mignon, and your knife will pass through it like butter. Start here before moving on to the higher marble scores (which yield richer and richer flavors).
This cut to order steak is available as 13 pounds' worth of steaks, cut to your desired thickness, or whole and uncut. Please note that we cannot provide estimates for the amount of steaks, as it varies a lot with each order. Steaks may also vary somewhat in shape and size, but our butchers will do their best to maintain your desired specifications.
All our Wagyu beef comes from Australian Wagyu cattle raised on a natural diet free from steroids, hormones and antiobiotics.

Storage: Unopened, use or freeze within 7 days of receipt. Once you've opened the vacuum-sealed bag, use or freeze within 1 day. If frozen, keep in the freezer for up to 6 months. To defrost, thaw overnight in the fridge, then use within 3 days.
